I love courgettes! I feel like they don’t get the credit they deserve, which is a shame. They can be considered quite bland, but that just means they give us so many possibilities for seasoning and flavours!
In this dish we’ve got some olives, peppers, lemon, coriander, and delicious olive oil to make it flavorsome, not to mention some delicious quinoa and seeds to give it some more texture and goodness! It’s a delicious and light lunch (and great to take to work as a pack lunch!) that won’t make you feel weighed down but will still leave you feeling super satisfied!
2 courgettes (zucchinis), sliced lengthways into thin ribbons
1 cup cooked quinoa
1 large red pepper, chopped
Juice and zest of 1 lemon
Glug of good quality olive oil
Handful kalamata olives, chopped
Handful coriander leaves
1 tbsp each sunflower & pumpkin seeds
1 tsp chili flakes
Sprinkle salt & pepper
Instructions
To slice your courgette/zucchinis, simply hold your courgette with one hand while you run a vegetable peeler down the length repeatedly. This should give you nice, long ribbons!
Toss your ribbons, quinoa, and all the rest of the ingredients in a large bowl and serve!
I like this dish cold, but if you want to slightly warm it up just place in the oven for a few minutes!
