Happy Pancake Day! Shall we celebrate with some healthy pancake recipes? I think we shall!
I can’t tell you how excited I am for this day, I’ve honestly been doing a countdown for the past couple of weeks. Not sure why, considering I’ve had pancakes three times in the last two weeks, but there is something about it being a whole day completely dedicated to pancakes just makes it that much more special when you have them.
One of my favourite parts? It doesn’t matter what meal you have them for, so pancakes for dinner are taking place in my house tonight. An array of toppings, endless drizzles of maple syrup, and many a spoonfuls of almond butter are taking place. So here are a few of my favourite healthy pancake recipes in case you want to join the party (and trust me, you do).
My Raspberry & Poppy Seed Pancakes – These are made with almond flour and are vegan as well, having no dairy or eggs in them. Plus, they’re soo yum! Find the recipe for them here.
Pomelo + Lemon Crepes – Maybe you’re more of a crepe than a pancake person, which is absolutely, 100% ok. You could go down the sugar and lemon route, but I’m more of a pomelo and lemon if I’m honest! Recipe here.
Giant Blueberry and Ricotta Hotcake – if you’re making pancakes for a crowd and can’t be bothered to flip, these are for you. With little pockets of ricotta and blueberry surrounded by fluffy pancake, it’s definitely a favourite! Recipe here.
Morning Glory Sweet Potato Waffles – so maybe you’re not into sweet pancakes. I can’t say I understand, but I’ve still got you covered. Waffles are just basically pressed pancakes right? Recipe here.
