So sweet potato waffles happened in my kitchen, which makes my waffle iron my all-time favourite purchase this year.

I’ve been going on about how I’ve wanted one for ages, and it was about time I actually got one. It was just one of those things that since it wasn’t a pressing matter it just got pushed back to the bottom of the list, ya know? But I was oh so mistaken guys. A waffle iron was absolutely essential, as are these sweet potato waffles. Essential for my happiness and for getting me out of bed, especially now that the air has a certain chill about it that just screams that winter is coming.

If you’ve never made sweet potato waffles, I beg you to make them as soon as possible. Go grab your waffle iron.

Honestly, these sweet potato waffles need to be made, you need to try them and tell me how much you love them like I do. They’re my new brunch favourite, especially when I’m after a savoury start to my day and don’t feel like having scrambled eggs or savoury oats. If you are in the mood for something sweet though, I thoroughly recommend my matcha waffles!

I use the VonShef waffle iron that I got from Amazon (UK | US) and find it super easy to use and clean, so I most definitely recommend it!

Morning Glory Savoury Sweet Potato Waffles

Ingredients
  • ½ cup cooked sweet potato
  • 3 tablespoons almond milk
  • 1 egg
  • 4 tablespoons cornmeal or polenta
  • 2 tablespoon olive oil
  • ½ teaspoon baking powder
  • ¼ teaspoon salt and pepper
  • ¼ teaspoon cumin
To Serve
  • Chopped chives
  • Black beans
  • Mashed avocado
  • Fried egg
  • Harissa paste
Instructions
  1. Place all of the ingredients into a food processor, blending until smooth and fully combined,
  2. Let sit for 10 minutes while you preheat your waffle iron.
  3. Coat the waffle iron with a thin layer of oil and pour the waffle batter, doing it in batches if necessary.
  4. Cook for 3-5 minutes, then serve with any and all desired toppings.
