VEGAN & PALEO Lushbombs (Bliss Energy Balls)

I love to carry snacks around. It just gives me peace of mind knowing I’ve got something easily accessible if the situation calls for it. Sometimes that means carrying around an apple, other times I just have to get something shop-bought, but my favourite by far is having something that I made myself. It’s quite satisfying, ya know?

My latest and greatest are these vegan and paleo energy ball bites! One of my biggest pet peeves with homemade energy balls is how they sometimes tend to become super soft and mushy if left out of the fridge out for more than 1 hour – which meant it could never be just tossed into my bag. Hmmf. I remember packing some balls for a plane once only to have them melt and get all soft inside the little bag I was carrying them in. I still ate them anyways, but got sticky all over.

Most recipes either used too much coconut oil / nut butter (not a problem if kept in the fridge), or use mostly dates to make up for it. In this recipe we’re going to use cacao butter! Not only is it solid at room temp, it has a mild flavour and makes it almost feel white-chocolate-y (almost). Win win!

  • vegan – and so dairy free
  • grain-free, gluten free, and paleo
  • over 5g of protein per ball
  • best kept outside the fridge, so super travel friendly
  • easy to make
  • naturally sweetened from dates and vanilla protein

Lushbombs - Vegan & Paleo Energy Balls

Ingredients
  • 8 dates, pitted
  • 4 tablespoons coconut flour
  • 1 scoop (30g) vanilla protein powder (I used a stevia sweetened one)
  • 1 tablespoons chia seeds
  • 4 tablespoons cacao butter, melted
  • 3 tablespoons nut or seed butter
  • 3-4 tablespoons activated buckwheat groats, whole nuts, or protein crispies
Instructions
  1. Place all the ingredients except for the buckwheat/nuts/crispies into a food processor.
  2. Blend until fully combined, then throw in the remainging ingredient and pulse a few times until combined.
  3. Use your hands and roll into balls, placing on a lined plate or container.
  4. Place in the fridge for 5-10 minutes to set, then keep at room temperature in a sealed container.
