Peach & Blueberry Vegan Waffles

The shops have been singing with fresh peaches, and, considering it’s one of my favourite fruits, I’m singing with them.

I love just simply snacking on a fresh peach, but thought I’d do something a bit different this time around – vegan waffles. Oh, and we’re also adding some blackberries for extra punch.

These vegan waffles are:

  • Full of fibre
  • Bursting with delicious fruit
  • Low in added sugar
  • Perfect re-heated the next day

Peach & Blueberry Vegan Waffles

Ingredients
  • ¾ cup plain flour (gluten free if necessary)
  • 4 tbsp wheat bran
  • 4 tbsp coconut flour
  • 1½ tsp baking soda
  • 1 tsp each of vanilla and cinnamon
  • 4 flax eggs (4 tbsp flax seed + 12 tbsp water)
  • 2 cups milk of choice (almond, coconut, ...)
  • ¼ cup maple syrup
  • 1 punnet blackberries, halves
  • 2 peaches (I used flat peaches), chopped into pieces
Instructions
  1. Whisk the dry ingredients together, pour in the wet ingredients and whisk again until combined. Let sit for 10 minutes.
  2. Heat up your waffle maker and when piping hot lightly grease with some coconut oil.
  3. Fill the waffle maker with about 2-3 tbsp of batter (depends on the size and shape of waffle maker), add a few blackberries and peaches into each, and let cook until the steam stops coming out, about 4 minutes.
  4. Keep warm in the oven until the whole batch is done cooking. Oven also helps it get even crispier!
  5. Serve with the remaining peaches and blackberries, some coconut yogurt, and creamy almond butter
