Healthy Toast - 3 Delicious Ways!

  • 1 slice of toast (for each)
Avocado Bean Toast
  • ½ avocado
  • Squeeze of lime juice
  • Pinch of salt & pepper
  • 3 tablespoons cannelini beans
  • Sprinkle of black sesame seeds & chilli flakes
Unicorn Toast
  • 3 tablespoons coconut yogurt (or yogurt of choice)
  • 1 tablespoon maple syrup
  • ½ teaspoon pitaya powder
  • ½ teaspoon blue spirulina
  • 1 tablespoon almond butter
Tahini Banana Toast
  • 2 tablespoons light (hulled) tahini
  • ½ banana
  • Sprinkle of coconut flakes and crunchy buckwheat (can sub for pecan pieces)
  • Drizzle of maple syrup or honey (optional)
For the avocado toast
  1. Mash the avocado with the lime juice, salt & pepper.
  2. Stir in the cannelini beans, lightly mashing them as well.
  3. Serve on the toast sprinkles with the black sesame seeds and chilli flakes.
For the unicorn toast
  1. Stir together the yogurt and maple syrup and divide into two small bowls.
  2. Whisk each powder into each bowl so you end up with a blue and a pink.
  3. Spread the almond butter over the toast, and top with the colourful yogurt.
For the tahini toast
  1. Spread the tahini on the toast, top with slices of banana, coconut flakes, and crunchy buckwheat.
  2. Drizzle the maple or honey, if using.
