I recently went to one of my friend’s Christmas dinner.
She took it upon herself to cook up a feast for 24 of us – no easy feat. If you follow me on the ‘gram, you would’ve seen the postings on stories what an amazing job she did. Different slow roasted meats, roasted root veggies, golden slice, wild rice (LOVE), stuffed butternut squash, gravy, red cabbage, the works. So naturally when she asked if anyone volunteered to bring anything, my hand figuratively shot up in the group chat – I’d be bringing dessert.
I wanted to make something that would be easy for people to grab, not necessarily needing plates (ie less washing up) and that screamed of festive cheer. Gingerbread cookies? Nah, it’s been done and dusted. Gingerbread brownies? Now we’re talking. Who doesn’t love chocolate?
Plus, it also meant one bowl (which I’m ALL about), no cookie cutters, no rolling, nothing. Something easy that took close to no time to whip up – unlike Helen, who started to cook for us from 9am that day. Such a trooper.
These gingerbread brownies are:
SUPER chocolate-y
flourless and gluten free
moist – yes, MOIST. get over it, it’s a great word.
Preheat your oven to 185ºC | 365ºF and line a large baking tray with baking parchment.
Add your butter to a large saucepan and slowly melt over low heat with the chocolate.
Remove from the heat before fully melted so it doesn't burn, whisk and set aside to cool slightly, stirring until everything is fully combined, then whisk in the eggs.
Stir in sugar and ginger, and sift in the flours, stirring until there are no white specks of flour through the batter.
Pour into the baking tray and bake for 15-20 minutes, or until a toothpick inserted in the centre comes out clean.
Set aside and let cool. Once cooled, slice into Christmas tree shapes and ice with the frosting. Top with crushed candy cane and sprinkles.
Place in the fridge until ready to eat and enjoy!
For the icing
Beat all the ingredients together until light and fluffy. Use a piping bag or place in a ziplock and snip a corner for your own DIY piping bag.
