Energy bites that are loaded with peanut butter and swirled with a delicious raspberry chia jam? There is nothing more to want from life than these energy bites right now.
Let me paint you a picture:
Lets say it is a mid-week night, or a even homey weekend night, you’re all cozied up to watch the whole season of Stranger Things in one go (I’m sure I’m not the only one) and you find yourself searching through the cupboards for sustenance. There is no such thing as watching shows and movies without a treat, it’s a well known fact. The trick is to reach for that snack that will feel like a treat and get you through the Netflix binge but that won’t leave you feeling like a slob.
You could, of course, reach for the closest packet of crisps or the tub of ice cream, or you could reach for one of these delicious little energy bites. Your move.
There is just so much to love these little energy balls. Peanut butter, check. Raspberry jam, check. Decadent snack that doubles as dessert and gives you energy? Heck yes, check!
I’ll let you into a not-so-secret of mine: I’m not the world’s biggest snacker. I have to say I will usually have these as a post-dinner or lunch treat or whip one out and enjoy with tea when I’m feeling a bit peckish. If you are a snacker though, you will love these just as much, as you can keep them in your fridge or freezer and just grab one as you feel those hunger pangs coming along, or throw one into your bag to help you face the day ahead.
There is barely any added sweetness, but these energy balls still taste delicious and like a treat. I’ve kept them as low-sugar as possible, so there are no dates added. As such, they aren’t chewy and taste more cake-y, but that just makes me love them even more! Chuck ingredients together into a food processor, and energy balls emerge.
They are also pretty room-temp stable, which means you can toss them in your bag without having to worry that you’re going to find a coconut oil-smushed mess of what once used to be shaped like an energy bite or bliss ball and has now basically melted into a blob.
