Place the raspberries and lemon juice in a small saucepan and heat over low-medium heat, stirring occasionally and breaking down the raspberries until softened and jam-like - about 10 minutes. Stir in chia seeds and set aside to cool.
Place remaining ingredients into a food processor and pulse until combined. Mixture will be crumbly but should hold together when pinched.
Ripple through the jam and place the mixture in the fridge for 10-15 minutes.
Using your hands, roll about 1 tablespoon of the mixture into balls and place on a lined baking tray. Repeat until all the mixture has been used.
Keep in the fridge or freezer and enjoy!
Notes
I used Pic’s Peanut Butter for this, and I would recommend you use a natural one with no added sugar or palm oil if you can find it.
*you can also use a natural sugar substitute here, such as Sukrin’s brown sugar replacement, which will keep it lower in sugar.
