Creamy Kale Caesar Salad

I’d like to introduce you to my favourite creamy kale caesar salad.

This caesar salad is a staple in my home. We make different variations every week, but this is one that keeps getting requested time and time again. It’s:

  • the healthier, homemade version
  • full of nutrition and nourishment!
  • taste freakin’ delicious
  • perfect for tossing together when you have guests for dinner

I lightly steamed the kale a bit as I prefer mine softer, then added some chickpeas and the croutons, which are just chopped up pieces of sourdough with some minced garlic and olive oil roasted in the oven till crispy.

Ingredients
  • 2 tbsp good quality mayonnaise
  • 2 tbsp grated pecorino
  • 1 tbsp apple cider vinegar
  • 1 tsp capers
  • 1 tsp mustard
  • 1 tsp tamari or soya sauce
  • ½ lemon, juiced
  • 1 clove of garlic, minced
  • Pinch salt & pepper
  • 1 medium bunch curly kale, leaves torn and stems discarded*
Instructions
  1. Simply whisk all the ingredients together and toss through the leaves.
  2. Make sure everything is coated in the creamy sauce - this makes enough sauce for around 2-3 big salads.
  3. I also served my salad with some garlicky croutons, chickpeas and grilled salmon on the side and it was YUM.
Notes
* I like to slightly steam my kale for 1-2 minutes to make it softer, but it's totally up to you.
