The Ultimate Vegan Burger Recipe

Earlier this year I did a collab with The Vurger Co – which to me serves by far the best vegan burgers in London. They’re all served in delicious brioche buns and each vurger is more creative than the next.

For my special edition Sprinkle of Green Vurger, we created what I now regards as the best vegan burger recipe – and ok I may be biased, but it is so mouth-watering delicious that it sold out on quite a few nights! Some of you who had tried it have been asking for the recipe, so Rachel from Vurger and I decided it would be a crime not to share it with you. Not only is it the this vegan burger recipe one of my favourites, but it is also so simple and contains so few ingredients – 5 in total – that it would be rude of you not to try it.

Serve with your favourite bun, I used vegan brioche but a seeded one would do just as well. We also slathered in a vegan mayo and some crunchy veggies for good measure.

The Ultimate Vegan Burger Recipe
 
Serves: 4
Ingredients
  • 100g kale
  • 1 medium broccoli
  • 40g watercress
  • 1 tablespoon matcha
  • 350g cooked cannelini beans
Instructions
  1. Boil or steam the kale and broccoli 8-10 minutes until cooked through.
  2. Drain off water as best as possible (squeeze if needed) 
and add the kale, broccoli and watercress into a food processor until mixed.
  3. Break down the cannellini beans with a fork.
  4. Add kale, broccoli and watercress mixture plus matcha and beans 
into a mixing bowl and mix until combined.
  5. Add breadcrumbs (gf / vg ) as much as is needed to formulate patties!
  6. Cook on a skillet or frying pan for a couple minutes on each side, being careful not to break them, and serve with your favourite bun. Simple!
