Almond, Banana, & Oat Bars and Healthy Snacking

Snacking sometimes comes followed by guilt – especially when said snack is a packet of crisps or a chocolate bar. But healthy snacking can be such a powerful tool in keeping blood sugar levels stable and also keep you from guzzling down your next meal.

My go-to choices are snacks that are high in protein and fats, as personally they’re what actually keep me satisfied. Almonds are probably king here as not only do they taste ah-mazing, but they contain 15 essential nutrients (per 100g) – so they keep me going all day long!

I’m always on the go, so I keep a collection of different sized jars – I never throw a glass jar away! – and just toss almonds or a homemade trail mix into them. When I’ve got more time on the weekends I might make a batch of my almond, banana and oat bars which are also very easily wrapped up and tossed into the bag for mid-week fuel.

Serves: 12
Ingredients
  • ½ cup slivered or roughly chopped almonds
  • 2 ripe bananas
  • 4 tablespoons almond butter
  • 1 cup | 100g oat flour
  • ½ cup | 50g protein powder of choice (I used vanilla)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 tablespoon yogurt
  • Pinch of salt
  • Sliced banana, to decorate (optional)
Instructions
  1. Preheat your oven to 175ºC | 350ºF and roast your slivered almonds for 10 minutes, tossing once halfway through.
  2. Peel your bananas and place in a mixing bowl. Mash with a fork or masher until creamy - some lumps are ok. Mix in the almond butter, egg and vanilla until combined.
  3. Stir in the remaining ingredients and mix until combined.
  4. Remove the tin from the oven, stir the roasted almonds into the batter, and line or lightly grease a brownie tin. Pour the mixture into the tin and decorate with the banana slices, if using.
  5. Bake for 20-25 minutes, until the golden around the edges and a toothpick inserted in the middle comes out clean.
  6. Let cool, cut into slices, and enjoy!
