Vanilla Birthday Cake Pancakes

When you go to bed the night before dreaming of what you want to have when you wake up. Because sleep is basically a time machine to breakfast right?

Made these Vanilla Birthday Cake Pancakes for a lazy weekend breakfast (aka brunch) the other day to help get over some post holiday blues and have to say they actually helped! Fluffy pancakes filled with colourful sprinkles, drizzled with sweet maple syrup and served with a dollop of ice cream.

Ingredients
  • 1 cup milk of choice (I used almond)
  • ¾ cup flour (gf if necessary)
  • ¼ cup vanilla protein (or more flour)
  • 1 egg or flax egg (1 tbsp ground flax + 4 tbsp water)
  • 1-3 tbsp maple syrup
  • 1 tsp baking soda
  • 2 tsp vanilla powder or extract
  • 1 tsp apple cider vinegar
  • Pinch of salt
  • ½ cup colourful sprinkles
  • Maple syrup and ice cream, to serve
Instructions
  1. Place all the ingredients, except sprinkles, into a blender and blend just until combined. Stir through the sprinkles.
  2. Heat up a skillet and lightly grease. Once hot, gently pour about 1 ice cream scoop of the batter on the pan to make 1 pancake. I can usually fit 3 at a time in my pan.
  3. Cook for 2-3 minutes, until the top starts to bubble. Flip and cook for another minute.
  4. Repeat until you’ve used all the batter. Should make about 10 pancakes.
  5. Serve win some maple syrup, extra sprinkles, and a generous dollop of ice cream
