This is a green smoothie that makes me happy in the morning.

I’m usually not a morning grinch. I can wake up and get on with my day in a cheerful manner, sans coffee. I’ll usually leave my phone far away, so I have to get up to turn off my alarm. The first minute is rough and my bed just calls my name, but if I just stay out of my cozy sheets those testing first minutes then usually all is well.

Another easy way to keep me away is a promise of something delicious. I know smoothies sometimes don’t sound like a treat, but to me this one is. You’ve got the sweet and creamy green smoothie mixed with the tart coulis. Plus, it just looks so pretty!

I make the coulis out of berries that are turning a bit sad in my house and keep it in the fridge for such situations. I used it before in my Matcha Waffles and a similar one as well on my Carrot Cake Porridge. So versatile.

Lean Green Almond Butter and Red Berry Smoothie
 
Serves: 1
Ingredients
  • 200ml almond milk
  • 1 large handful baby spinach leaves
  • 1 banana, peeled and frozen in chunks
  • 1 tablespoon almond butter
  • 1 teaspoon ground flax seeds
  • 3 tablespoons red berry coulis
Instructions
  1. Place your almond milk and spinach in a blender and blend until combined.
  2. Add all the remaining ingredients, except coulis, and blend until smooth and creamy.
  3. Spoon coulis into a glass and pour in the smoothie. Use a spoon to gently marble the sides with the coulis and enjoy!
