Carrot & Chive Savory Breakfast Paleo Pancakes

Savory Paleo Pancakes were a very unexpected addiction to my morning.

I made them for breakfast and wasn’t expecting much to be honest, but they might just be joining my team of favourite breakfast for when I’m not in the mood for something sweet – not common, but happens.

They’re basically a substitute for toast, and carry the avocado and egg perfectly!

Savoury Breakfast Pancakes

  • 2 eggs
  • 1 carrot, chopped in chunks
  • 3 tablespoons coconut flour
  • 1 tablespoon lemon juice + zest
  • 1 tablespoon dill
  • 1 tablespoon chives
  • ¼ teaspoon baking soda
  • Pinch of salt & pepper
  • Splash of almond milk
  1. Simply place all the ingredients in a blender or food processor and blend until smooth.
  2. Heat up a skillet with some coconut oil. When hot, use about 1 tablespoon of the batter to make 1 pancake. Cook for about 1-2 minutes, flip, and cook for another minute. I can usually do 3-4 pancakes at a time.
  3. Serve with some avocado with lime juice, a crispy fried egg, and enjoy!
