Apple Caramel Zoats aka Zucchini Oats

These APPLE CARAMEL ZOATS (aka Zucchini Oats) are here to stay!

Unless you’re not a fan of Instagram, chances are you’ve come across zoats, which basically means you add grated zucchini (courgette in the UK) to your morning bowl of oats. Might sound weird but I promise it doesn’t taste like you’re eating grated veg.

This bowl is:

  • creamy af
  • breakfast that borderlines on tasting like dessert
  • high in protein and fibre
  • done in 15 minutes so you can be out the door in time!

I used to grate carrots all the time into my oatmeal (even have a super old recipe here on le blog for carrot cake oats) but adding the grated zucchini (aka courgette) is somewhat of a recent addition. It perfectly bulks up your porridge bowl and adds fibre, plus it soaks up the flavours well so the veggie taste is completely masked.

Ingredients
  • 40g oats
  • ½ zucchini/courgette, finely grated
  • ½ apple, finely grated
  • 1 teaspoon sweet miso paste
  • ½ teaspoon cinnamon
  • 1 scoop salted caramel pea protein (I like MissFits Nutrition)
  • 3 tablespoons wheat bran (can sub for ground flax and chia)
  • 2 tablespoons yogurt of choice (coconut, soy, almond, greek etc)
Instructions
  1. Cover your oats with 1 cup boiling water in the pan and let soak for 10 minutes.
  2. Add in the grated veg, apple, and miso paste and bring to a simmer.
  3. Cook for 5 minutes, stirring often and adding more water if necessary.
  4. Remove from the heat and stir through the remaining ingredients.
  5. Serve with your favourite toppings - I used pistachio butter, cacao nibs, and dried mulberries 😋
Notes
Use the 10 minutes of soaking the oats to finish getting ready in the morning!
