I’m a big oatmeal fan. Like, really big.
There are few things in life which compare to sitting down with a bowl of creamy porridge on a cold winter’s morning. It’s one of the few things which will actually make me excited to come out from hiding under my duvet. Why would anyone in their right mind ever leave their warm bed for anything other than food?
But sometimes even a die hard fan like me needs to change it up a bit to keep the relationship interesting.
I know having oat and quinoa porridge is a bit unusual, but believe me on this one, it really does work. The quinoa is soft without being mushy and holds it’s place next to the rolled oats. Of course we’re not just stopping there, oh no. We’re also going to add carrot juice to make it deliciously orange and earthy sweet, and to top it of we’re going to actually top it off with some tart berry compote.
I’ve had this porridge plain, with the berry compote, and with all the trimmings.
I’ll never tire of almond butter and grated apple, but if all you have time for is the compote then that is perfectly fine. That’s how I eat it when I don’t feel like grating or spooning anything else, and it’s still equally delicious. Even compote free it works, but the compote really does take it to a whole different level here.
I’m a big fan of sneaking in vegetables into any and all meals, and I’ve even done it to porridge before with my Carrot Cake Oatmeal a while back. It was such a huge hit that I had to make another carrot-y version, and this oat and quinoa porridge has stolen my heart, berry compote and all.
A quick tip is to make a large match and keep it in the fridge to enjoy throughout the week. You can eat it cold or quickly warm it up in a small pan with a splash of water, that way you’ve got a special breakfast mid-week with zero fuss.
