This is probably the best porridge you could have to start off your day! It’s creamy and delicious, not to mention it’s so so good for you! It’s amazing for the winter, where we all just need that extra warm hug on a cold morning!
The buckwheat gives it such a nice texture, and the almond butter makes it even more creamy and moorish! We’ve also got turmeric, which gives it it’s incredible colour and just makes it’s goodness skyrocket! Turmeric is anti-inflammatory, it increases the antioxidant capacity of the body, it may help prevent cancer, heart disease, and even Alzheimer! If that doesn’t convince you to add it to your porridge, at least do it for the gorgeous golden colour! And no, it doesn’t make your porridge taste like curry so no need to worry!
½ cup buckwheat groats, soaked in water overnight (100g)
⅓ tsp ground turmeric
⅓ tsp ground cinnamon
1 scoop vanilla protein powder (30g)(optional)*
2 tbsp coconut oil
½ cup water (125ml)
Toppings
almond butter
blueberries
goji berries
cacao nibs
pecans
chia seeds
Instructions
Drain and rinse your buckwheat and place it in a saucepan on low heat with the rest of the ingredients.
You want to gently warm it up, so that it doesn't boil or get too hot. We just want to get it nice and warm to be enjoyed straight away!
Stir until everything is combined and warmed through, after three minutes or so. Adjust your water depending on how runny or gooey you like it - but keep in mind that it does soak up the water a bit more when you remove it from the heat!
Serve in a bowl with your favourite toppings!

*I used a vegan protein powder called Nuzest, which doesn't taste very 'earthy' and I really like!
