Creamy Kale Caesar Salad

- 2 tbsp good quality mayonnaise
- 2 tbsp grated pecorino
- 1 tbsp apple cider vinegar
- 1 tsp capers
- 1 tsp mustard
- 1 tsp tamari or soya sauce
- ½ lemon, juiced
- 1 clove of garlic, minced
- Pinch salt & pepper
- 1 medium bunch curly kale, leaves torn and stems discarded*
- Simply whisk all the ingredients together and toss through the leaves.
- Make sure everything is coated in the creamy sauce - this makes enough sauce for around 2-3 big salads.
- I also served my salad with some garlicky croutons, chickpeas and grilled salmon on the side and it was YUM.
* I like to slightly steam my kale for 1-2 minutes to make it softer, but it's totally up to you.
