Serves: 36
  • 180g butter
  • 150g dark chocolate
  • 75g milk chocolate
  • 2 eggs and 1 egg white, beaten
  • 180g light muscovado sugar
  • 1 tbsp ground ginger
  • 45g tapioca starch
  • 65g almond flour
For the frosting
  • 75g butter
  • 75g icing sugar
  • 1-2 tablespoons wheatgrass or spirulina
To top
  • Crushed candy cane
  • Star shaped sprinkles
  1. Preheat your oven to 185ºC | 365ºF and line a large baking tray with baking parchment.
  2. Add your butter to a large saucepan and slowly melt over low heat with the chocolate.
  3. Remove from the heat before fully melted so it doesn't burn, whisk and set aside to cool slightly, stirring until everything is fully combined, then whisk in the eggs.
  4. Stir in sugar and ginger, and sift in the flours, stirring until there are no white specks of flour through the batter.
  5. Pour into the baking tray and bake for 15-20 minutes, or until a toothpick inserted in the centre comes out clean.
  6. Set aside and let cool. Once cooled, slice into Christmas tree shapes and ice with the frosting. Top with crushed candy cane and sprinkles.
  7. Place in the fridge until ready to eat and enjoy!
For the icing
  1. Beat all the ingredients together until light and fluffy. Use a piping bag or place in a ziplock and snip a corner for your own DIY piping bag.
