Oatmeal can warm up any cold morning, but sometimes I feel like having oats even when it isn’t cold and rainy outside.
When the sun is shining, I want my breakfast to reflect that, and this bowl of goodness definitely does. It’s bright and sunny, with the flavours being warming enough to eat in the cold but also perfectly suiting that bright and warming morning sunlight that I love so much.
To change it up from everyday porridge, we’re using spelt. It’s deliciously nutty and gives this sunny porridge a change from the normal, plain oat porridge.
I also love the speckles of vanilla that run through the porridge, so if you can’t find vanilla powder try and use some fresh vanilla pods. It makes such a difference, I promise!
To keep it even more interesting, we’re topping it with passionfruit! It gives this porridge an almost exotic feel, almost like being on holiday. Then we’ve got the delicious crunchy seeds, which goes perfectly with the crunch from the granola topping.
To balance out all that crunch, the creamy porridge teams up with some delicious banana and nut butter. I used peanut butter on mine, but almond butter or even tahini would work really well here as well.
I actually decided to use passionfruit in my porridge as I got tons in my weekly local farmers veggie box, and since I hate hate hate wasting food, I had to make sure each and every last one got used. Porridge seemed like a good way for them to go!
Spelt is a wheat-free grain, but do bear in mind that it does still contain gluten, even if in less amounts. If you want to keep this gluten free, simply sub the spelt for some more certified gluten free oats.
