I feel like side dishes don’t get enough credit. They’re can often overlooked and ignored, and we’re left with some bland steamed veggies. Not this. This is the my favourite side dish.
The hints of lemon are just heavenly, especially when you bite into that roasted garlic which has soaked up all the delicious flavours. The broccoli is crispy and tender, and the plump goji berries provide an amazing tartness and sweetness to the dish.
This can be a side to anything really. Have it in a large bowl with some avocado, wholesome grains, or hummus. If you eat meat, it’s perfect alongside almost any type. You can even have it instead of popcorn as a movie snack, as the crispy broccoli holds it’s shape perfectly – though I’d omit the goji berries if you’re making it into finger food.
3 tablespoons goji berries, soaked in water for 5 minutes then drained
Instructions
Preheat your oven to 180ºC/350ºF.
Chop your broccoli into bite sized florets, and making sure to shop the stem into small bite sized pieces as well.
Toss broccoli with garlic, lemon zest and juice, sea salt and coconut oil, using your hands to make sure the whole broccoli is coated.
Bake in the oven for 25-30 minutes until tender and the tops are crispy.
Once broccoli is done roasting, add your almonds to a skillet or pan and toss over medium heat until toasted. Add to a large bowl along with roasted broccoli and drained plump goji berries.
Sprinkle over some more lemon zest, if desired, and serve warm.
