Superfood Goji Berries & Lemon Roasted Broccoli Bowl

  • 2 heads of broccoli
  • 3 cloves of garlic, finely chopped
  • ½ lemon, zest and juice
  • Good sprinkling of sea salt
  • 2 tablespoons melted coconut oil
  • ¼ cup slivered almonds
  • 3 tablespoons goji berries, soaked in water for 5 minutes then drained
  1. Preheat your oven to 180ºC/350ºF.
  2. Chop your broccoli into bite sized florets, and making sure to shop the stem into small bite sized pieces as well.
  3. Toss broccoli with garlic, lemon zest and juice, sea salt and coconut oil, using your hands to make sure the whole broccoli is coated.
  4. Bake in the oven for 25-30 minutes until tender and the tops are crispy.
  5. Once broccoli is done roasting, add your almonds to a skillet or pan and toss over medium heat until toasted. Add to a large bowl along with roasted broccoli and drained plump goji berries.
  6. Sprinkle over some more lemon zest, if desired, and serve warm.
