Glazed Baked Bananas

Baked Glazed Bananas | perfect for topping over oatmeal and porridge, as a snack, with some ice cream or simply over toast

Bananas were always a fruit I loved as a kid. Actually I loved most fruit as a kid – except for papayas, that was acquired with age – and growing up in Brazil meant I was always surrounded by the most beautiful fresh fruit.

I’ve eaten mangos and apples straight from the tree, picked oranges and lemons, and got my clothes and hands stained by gorging on fresh mulberries from the tree in my school. Fruit was abundant and I loved every minute of eating it!

One of the desserts that my auntie used to make was baked bananas, which would come out deliciously caramelised and be served with cooling ice cream. It tastes super decadent, and I’ve made it so many times I thought I’d share it with you guys.

I’ve made these baked bananas into rounds, though you can bake it whole if you prefer, I just find the slices funner 😉

Serves: 2-4
Ingredients
  • 2 large bananas
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • Sprinkling of coarse sea salt
Instructions
  1. Preheat oven to 175ºC / 350ºF and line a baking tray with baking paper.
  2. Peel and chop your bananas into 1cm round disks and toss with the remaining ingredients, except for the salt.
  3. Arrange the slices on the baking tray and sprinkle over the sea salt.
  4. Bake for 15-20 minutes until golden and caramelised.
