It’s a pretty well-known fact that I happen to absolutely love cookies followed closely second by brownies. It’s not like I’m going to hate on any other dessert or sweet treat, but these are the two I naturally find myself gravitating towards.
What I find irresistible about blondies is that they combine the best qualities of both – they have the fudge-ness and thickness of a brownie, while still being chewy, toffee-like and buttery-rich like a chocolate chip cookie.
Now, with me being me and this being a blog on sprinkling wellness where and when possible, these gluten free blondies are made with almond and brown rice flour, and I’ve used organic grass-fed butter, though use what is available to you.

I actually made these to take to one of my best friend’s birthday picnic. I’m not particularly good at hand-made birthday cards, crafty gift-wrapping, or balloon animals. However, if you want baked goods, then I’m your girl.
I mean, I can get you a lovely birthday card and write some sweet things inside, but I’m much better at bringing said sweet things lovingly baked with some form of chocolate – triple chocolate in the case of these gluten free blondies!
