For me summer is all soaking up as much sun as humanely possible.

All I want to do is kick back in the park with my toes in the grass, people-watching and having myself a picnic. The one thing that makes all that better? Taking this banana bread berry crumble (or crips for my American friends) with me and eating  it sprawled on my picnic blanket.

I take it out of the oven, still deliciously hot, and carefully bring it with me to the park close to my flat. I fold out my blanket, plop myself down, and enjoy it in its perfect post oven but slightly cooled temperature. It’s perfect.

Ingredients
For the Fruit Layer
  • 2 cups mixed berries, fresh or thawed frozen
  • 2 tablespoons almond flour
For the Banana Bread Cobber Layer
  • 1 small ripe banana
  • 4 tablespoons rolled oats
  • 3 tablespoons pecans, roughly chopped
  • 2 tablespoons almond flour
  • 1 tablespoon maple syrup, optional
  • 1 tablespoon buckwheat flour
  • 1 tablespoon ground flax seeds
  • 1½ tablespoons coconut oil
  • Pinch of salt
Instructions
  1. Preheat your oven to 185ºC / 365ºF and lightly coat 1 medium ramekins (mine was 10cm in diameter) with coconut oil.
  2. In a large bowl, toss together your fruit layer toppings and add to the ramekin.
  3. In a medium bowl add your bananas and mash with a fork until smooth. Stir in remaining ingredients until combined. Spoon over the fruit mixture in the ramekin.
  4. Bake for 30 minutes, until fruit is hot and bubbly and the banana bread crumble is golden.
  5. Serve warm as is or with some coconut cream or yoghurt.
