Rainbow Fruit Smoothie

I just loved this smoothie.

I mean, just look at it! It’s a rainbow in a jar. Can’t get much prettier than that!

The idea for this actually came from a stand in the streets of Marrakech. It was a single window, with no sign, and there was one man in there dishing out layered smoothies, and it was absolutely amazing. If you look at this old post and scroll down, you’ll see a picture of said stall!

Also, it tastes incredible. You get this delicious sweetness from the fruit and the dates, and you’ve still got some hidden greenery in there from the spinach.

It’s the perfect smoothie to trick kids into drinking some greens, especially if they tend to be averse to a fully blown green smoothie. This way, it looks fun and playful, and they’ll be none the wiser. Though its not just for kids! I drank every last drop of this and loved every minute of it.

This is more of a smoothie to have at home, as the colours won’t keep their space that well if shaken when travelling. It’ll still taste delicious, but all your hard work to make the pretty layers will be wasted

It does take a bit more time to make than your average chuck-it-all-in-a-blender smoothie, but it does make it look so so special. I’d keep it for those special occasions when you want to impress someone, or even when you want that extra pretty pick-me-up.

Rainbow Fruit Smoothie
 
A show stopper smoothie, that is as delicious as it is beautiful. It's a guarantee to please both the kids and adults, and it's a perfect balance of sweetness, citrus, and even some delicious green goodness. Amazing for breakfast or as a sunny afternoon pick-me-up!

Ingredients
Passion fruit Layer
  • 2-4 passion fruits, chopped in half
Pink layer
  • Handful strawberries
  • ½ a large banana
  • ½ cup (125ml) almond milk
  • ½ teaspoon vanilla powder
  • ½ lemon, juiced
Green layer
  • Large handful spinach leaves
  • ¼ of an avocado
  • ½ cup (125ml) water
  • ½ large banana
Orange layer
  • 1 orange, peeled (I used a Cara Cara Orange)
  • ⅓ of a small pineapple, chopped into chunks
  • 1 teaspoon bee pollen
  • 1 tablespoon tahini
  • 80ml (1/3 cup) almond milk
  • Small piece freshly grated ginger
Purple layer
  • Handful blueberries
  • 1 red cabbage leaf
  • 80ml almond milk
  • 1 tablespoon almond butter
  • 2-3 dates, pits removed (optional)
Instructions
  1. Start by scooping out the flesh of your passionfruit into two glasses or jars.
  2. In a blender, blend all of the ingredients for the pink layer until smooth and creamy and carefully pour equally into the two glasses, careful not to mix with the previous layer too much.
  3. Repeat with each of the remaining layers, making sure to rinse out your blender in between and carefully and equally pouring into the two glasses.
Notes
FRUITS - You can use frozen berries and bananas for an even creamier and colder smoothie. I used a mix of fresh and frozen, so use whatever you have that is in season and available to you.
