Post Workout Banana Bread French Toast

If you follow me on Instagram you’re well aware that I just spent the most incredible and amazing time in California and am now back in London. Jet lag is hitting me hard, so I’ve been slowly getting back into the groove of things while trying to not fall asleep on top of my laptop – which hasn’t been easy!

One of the things that usually gets me back on track is exercise. It wakes me up in the morning and gets me going, plus also makes me feel great about getting my sweat on after being confined to a flying metal tube for 10 straight hours. I’ve actually just got home from an intense boxing workout and am famished, so devouring a generous plate of this healthy french toast more than fits the bill and makes me feel fight those post-holiday blues as well.

After an intense workout, especially one that involves so much sweat and cardio as boxing, I like to make sure my meals have a good balance of protein and carbs to replenish and keep my body and muscles happy, not to mention that this healthy french toast keeps my taste buds happy as well!

My mother used to make french toast for my brothers and me whenever we were all home.

Being the youngest meant I was the last one to leave home, and I was always so happy when my brothers came to visit as it not only meant I got to see them, but it was also when we would all sit around our big dining table, having a breakfast fit for a king with my mother’s homemade french toast.

These are my take on them. A bit less added sugar, a bit more banana bread, a whole lot healthier. Banana bread healthy french toast, welcome to the world!

Ingredients
French Toast
  • 12 slices banana bread
  • 2 eggs, yolks and whites separated
  • ½ teaspoon cinnamon
  • ½ tablespoon maple syrup
  • 1 tablespoon coconut oil
Toppings
  • Berries
  • Passion fruit
  • Yogurt of choice - greek, natural, goat’s or coconut
  • Bee pollen
  • Maple syrup
Instructions
  1. Place your yolks in a bowl alone with the cinnamon and maple syrup and whisk until combined
  2. Add your egg whites in a separate bowl and whisk until light and frothy, then pour into bowl with remainging ingredients.
  3. Gently stir it together, then dip the slices of banana bread in the mixture and turning on both sides so that it gets really covered.
  4. Heat the coconut oil in a frying pan on medium-high heat, then add your slices.
  5. Fry for 1-2 minutes on each side, until golden but not burnt.
  6. Remove to a paper-towel lined plate to drain excess coconut oil and keep it from being too greasy.
  7. Serve topped with berries, some yogurt, passion fruit, and a drizzle of maple syrup. Enjoy!
