Post Workout Banana Bread Healthy French Toast

Serves: 4-6
- 12 slices banana bread
- 2 eggs, yolks and whites separated
- ½ teaspoon cinnamon
- ½ tablespoon maple syrup
- 1 tablespoon coconut oil
- Berries
- Passion fruit
- Yogurt of choice - greek, natural, goat’s or coconut
- Bee pollen
- Maple syrup
- Place your yolks in a bowl alone with the cinnamon and maple syrup and whisk until combined
- Add your egg whites in a separate bowl and whisk until light and frothy, then pour into bowl with remainging ingredients.
- Gently stir it together, then dip the slices of banana bread in the mixture and turning on both sides so that it gets really covered.
- Heat the coconut oil in a frying pan on medium-high heat, then add your slices.
- Fry for 1-2 minutes on each side, until golden but not burnt.
- Remove to a paper-towel lined plate to drain excess coconut oil and keep it from being too greasy.
- Serve topped with berries, some yogurt, passion fruit, and a drizzle of maple syrup. Enjoy!
