The days have a new defining chill about them, signalling that summer is well and truly over and that winter is coming in full bloom. It’s cosy season, and it’s also time to crank up that heater, make yourself a hot drink, and cuddle up with some protein banana bread.
Actually, you could even forgo the heater completely, letting the oven do the work as your home gets wonderfully fragrant with freshly baked protein banana bread. You get warmth, and you get baked goods. It’s definitely a win in my eyes.
Slicing into a freshly baked loaf is one of life’s greatest pleasures. I just love having that first slice, spread with some butter or peanut butter, and knowing I still have the whole loaf to devour if I so desire – though I try not to, exercising self control is something I’ve definitely been working on lately.
As this is a protein banana bread bread, I’ve decided to keep any added sweetness to a minimum.
I wanted a banana bread that I could have after a workout or for breakfast, without having to feel like I was having a huge dessert-like treat that would be offsetting any of the time I spent in Warrior 2 in yoga, doing pull-ups in Calisthenics, or holding the damn plank in Barre. Oh, and don’t even get me started on burpees – effective, but bane of my life and always makes me want to cry a little bit.
Anyways, back to the protein banana bread. Since we have a higher content of egg whites and have kept it grain-free, it is denser than a normal banana bread. I’ve also kept it at 2 bananas, which gives you the banana sweetness without it hitting you in the face. I decided to swirl some caramel on the top, though that part was for pure indulgence and you can obviously leave it out if you so desire.
