Caramel & Chocolate Chip Protein Banana Bread

Ingredients
  • 2 large ripe bananas
  • 1 egg
  • 2 egg whites
  • ¼ cup greek or coconut yogurt
  • ¼ cup | 35g coconut flour
  • ¼ cup | 25g almond flour
  • ¼ cup | 25g rapadura, coconut or brown sugar
  • 1 scoop | 20g protein powder of choice
  • 1 tablespoon ground flax seeds
  • 1 teaspoon baking powder
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon sea salt
  • 2 tablespoons caramel of choice
Instructions
  1. Preheat your oven to 160ºC | 350ºF and line a 1L loaf tin with baking paper or lightly grease with coconut oil.
  2. Peel your bananas and add to a food processor along with the eggs, egg whites, and greek yogurt and blend until combined and smooth. Alternatively you can mash the bananas with a fork or potato masher and simply whisk in the other ingredients.
  3. Add in the remainging ingredients, except caramel, and depending on your chosen method either blend or whisk again until combined and smooth.
  4. Pour the batter into the loaf tin and swirl in your caramel. Let sit for 10 minutes at room temperature to thicken.
  5. Bake for 1 hour, or until a toothpick inserted in the middle comes out clean.
  6. Let cool completely before slicing.
