I have a very serious love for smoothie bowls.
They are the perfect excuse to eat something that more resembles a dessert than breakfast, and you get to eat it first thing in the morning. It’s like a marriage between ice cream, a granola bowl, and what I imagine paradise tastes like. Because yes, paradise for me most definitely involves food.
Sweet mangoes and ripe frozen bananas are blended with creamy nut butter for the ultimate breakfast. I love using my Healthy Nut Butter for this recipe, both in the smoothie and as a topping, because you can never have too much nut butter in my world. If you want a nut free version, tahini or sunflower butter would also be a good shout.
Nothing beats starting your day with something this delicious. I find it pretty hard to have a bad day when breakfast is this good! How can anyone resist a creamy and thick smoothie topped with crunchy granola clusters, plump berries, and sweet mangoes?
I recently had some friends staying with us for a few days, and I made this for breakfast twice. It was so popular and so loved, definitely made me feel like the ultimate hostess! On the second occasion we had a smoothie bowl topping competition for who was able to create the most beautiful bowl, and it really made everyone get really stuck in on decorating theirs. If you’ve got little ones, that could definitely be a way to get them stuck in – if we adults loved it, kids will probably love it even more!
The smoothie base itself is super easy to make. The only prepping you need to do is to freeze some bananas beforehand. If you forget, you could add some ice cubes in a pinch – it won’t be exactly as ice cream-y, but it’ll do. I wouldn’t want to deprive of this bowl on such a small detail as frozen bananas.
For toppings, you could use my Cardamom & Vanilla Granola for some delicious flavour, or if you want to keep the whole shabang grain free, my Maple & Cinnamon no Grain-ola is the perfect shout. Whatever you decide to top your smoothie bowl with, it’s near impossible to go wrong.
