PROTEIN. PALEO. GRAIN-FREE. BREAD!
After searching far and wide for a different bread option here in the UK, I couldn’t really find anywhere that did a gluten free bread that was a bit more nutritious, with a higher protein content, and also lower carb for days when I didn’t want a carb-load. I love normal bread as well – mmmnmmm warm crusty sourdough – but also wanted an alternative, so I decided to make my own!
Now, this being a low carb protein bread it of course is not like a sourdough, there is no yeast to give it those light air pockets. It’s a dense yet delicious and super satisfying loaf, where 1 slice is all you need. Also, one slice contains almost 9g of protein and less than 2g of carb, so it’s a pretty good trade-off!
I love having a slice with some smashed avocado and a poached egg for breakfast, or smeared in almond butter and cocoa nibs for a snack. Simplicity at its best.
