Protein Grain-Free Bread (Low Carb + Paleo)


After searching far and wide for a different bread option here in the UK, I couldn’t really find anywhere that did a gluten free bread that was a bit more nutritious, with a higher protein content, and also lower carb for days when I didn’t want a carb-load. I love normal bread as well – mmmnmmm warm crusty sourdough – but also wanted an alternative, so I decided to make my own!

Now, this being a low carb protein bread it of course is not like a sourdough, there is no yeast to give it those light air pockets. It’s a dense yet delicious and super satisfying loaf, where 1 slice is all you need. Also, one slice contains almost 9g of protein and less than 2g of carb, so it’s a pretty good trade-off!

I love having a slice with some smashed avocado and a poached egg for breakfast, or smeared in almond butter and cocoa nibs for a snack. Simplicity at its best.

Protein Grain-Free Bread (Low Carb + Paleo)
Serves: 12
  • 100g | 1 cup almond flour
  • 50g | ½ cup protein powder
  • 2 tablespoons coconut flour
  • 30g } ¼ cup ground chia or flax seeds
  • ¼ teaspoon sea salt
  • 1½ teaspoons baking soda
  • 5 eggs
  • 1 tablespoon apple cider vinegar
  • 125ml | ¼ cup melted butter or coconut oil
  • Black sesame seeds, for sprinkling
  1. Preheat the oven to 175ºC | 350 ºF and line a loaf tin with some parchment.
  2. In a large bowl combine the first 6 ingredients.
  3. In a jug or bowl whisk together the eggs, apple cider vinegar and melted butter or coconut oil.
  4. Pour into the large bowl and stir until combined, then pour batter into the loaf tin.
  5. Bake for 40-45 minutes.
  6. Remove and let cool before serving!
Can be frozen, simply slice and wrap up!

    is it whey protein powder? or egg white protein powder? hemp?

    • Completely up to you – I used unflavoured whey protein, though you could use whichever one you have at hand, just bear in mind if it’s flavoured it’ll add whatever flavour it has to the bread. xx

        Thanks for replying. Whey isolate or concentrate? Probably no difference. MORE importantly – what SIZE of loaf pan? The bread looks really small.

        • Yep no difference between whey isolate or concentrate! My loaf pan was indeed small, you could work with one that is 4 – 6 cups. If you use a bigger one it’ll simply result in a flatter bread. Hope this helps!
