Chocolate chip cookie cups. Cookie freakin cups. These were so good the batch did not last the day, and there were 12 of them. They are moorish little pockets of cookie dough, salty pretzels, peanut butter and chocolate chips. They’re addictive, and the fact that they are so simple to make means they’ll probably be happening a bit too often.
Not too long ago I graced the blog with these coffee & oat breakfast cookies, and now wanted to take it a bit further and make bigger, more decadent cookies. These might not be perfectly suited for breakfast, but they do make one heck of a treat – especially when warm out of the oven, with some ice cream, and perhaps an extra drizzle of chocolate.
They are gluten free, made with a combination of almond, oat, and brown rice flour. If you’d rather use plain flour simply substitute per weight.
These Peanut Butter, Pretzel & Chocolate Chip Cookie Cups were made for Red Nose Day, which is happening on the 24th of March. If you’re from outside the UK, Red Nose Day is a a fundraiser organised by Comic Relief to help fight poverty and injustice.
On Red Nose Day everyone is encouraged to cast inhibitions aside, put on a Red Nose and fundraise – and one of the ways to do so is through a Bake Sale. That is also why these little chocolate chip cookie cups have little raspberries for noses. It’s such an amazing cause to get involved in, so bust out those baking tins, turn on the oven, and put on that red nose!
