When I was a kid, I was obsessed with ice cream.
I could have it anytime, anywhere, any-day. If my mother bought a pot, it would disappear soon. My favourite used to be a blue coloured one called blue skies. No idea what kind of flavour it was (or the horrible stuff it had to make it blue!), except it ruled my heart. But then, I tried mint chocolate chip ice cream, and poor blue skies was never more.
Now, my tastes have greatly changed since I was a kid, but my love for the chocolate-mint flavour combo has remained. And that is how this delicious smoothie came to be!
It hasn’t got ice cream, so is completely dairy-free and vegan! It’s instead made creamy and amazing by the avocado, which is filled with good fats, antioxidants, and fiber. Instead of the normal chocolate chips we use raw cacao nibs, which contain the antioxidant flavanoid, which has been linked to preventing cancer and Alzheimer.
We’ve also got the spinach to add some more green goodness and chia seeds for Omega-3s which are so so important for heart health! Not to mention that they’re also an amazing source of fiber!
That is one of the awesome things about this smoothie! It’s absolutely delicious and so so good for you! I loved it so much I was scraping what was left in my blender with a spoon! No smoothie left behind on my watch!
To make for one, you will need:
1/2 Avocado, without the pip & flesh scooped out
1 cup mint leaves
Big handful of spinach
1 tbsp chia seeds
1-2 cups almond milk
1/2 cup cacao nibs + more to garnish
3 ice cubes
Let’s Make it Baby!
Simply add all the ingredients in a blender and whizz! Pour into a glass, and enjoy straight away – especially because if you don’t the chia seeds will gel up and you’ll end up having to eat it with a spoon!
