Green Goddess Smoothie + Green Chia Pot

You guys ready? This is probably the simplest 2-in-1 recipe I can share with you.

It’s so so easy, you make the smoothie, drink a glass full for breakfast, and use the rest for a substantial snack by mixing it with chia seeds. Taa-daa! You’re basically tackling two things at once, so it’s a definite win for me! I make this in the morning before work and don’t even have to worry about leaving something ready the night before.

It’s perfectly sweet from the banana, with the perfect nutty-ness from the peanut butter that comes through without being too overpowering. Every sip — or bite, from the pot – has that hint of peanut butter that I just love, so it never feels too “green”.

Oh, you can use almond if you want, but I’ve been having a peanut butter phase at the moment so yea, that’s what I’m using!

Both the avocado, peanut butter and banana make this an incredibly creamy smoothie – just how I like it! I hate it when I make a smoothie that turns out watery and unsatisfying. I need my smoothie to be thick, like the kind that basically wobbles when you shake the cup.

Of course if you want yours a bit thinner then simply add a bit more water. To each their own, ya know?

The perfect way to get your greens in your morning and your snack! Super easy to prepare, this guarantees a good start to your day and also makes a quick and delicious mid-morning or afternoon treat bursting with goodness!

Serves: 1 of each
Ingredients
For the Smoothie
  • 1 large banana
  • ½ avocado, flesh scooped out
  • 2 large handfuls of greens (such as spinach, frisee, oak leaf lettuce, watercress)
  • 1 celery stalk
  • 1 heaped tablespoon peanut butter
  • 150ml water
  • 150ml almond milk (or any milk of choice)
For the Chia Pot
  • 3-4 tablespoons chia seeds
  • Leftover green goddess smoothie
  • 1 tablespoon water (optional)
Instructions
Make the Smoothie
  1. Simply add all your ingredients into a blender and blend on high for about 1-2 minutes, until it has become a lovely and creamy smoothie without any chunky bits. Depending on your blender, you might have to do this for longer time!
Make the Chia Pot
  1. Add all the ingredients into a pot and stir so it doesn’t become clumpy.
  2. Place in the fridge to set for at least 20 minutes. The longer you leave it, the thicker it becomes.
  3. Enjoy straight from the fridge with a spoon!
Notes
NUT FREE - Use tahini or sunflower seed butter instead of the peanut.

PALEO - Use almond butter instead of peanut butter.

Freeze the leftover banana or chop it and top your chia seed pot!
