Very Berry Chia Pot

Ooh I love a good chia pot.

It’s a weird thing to love, but done right, it can be pretty amazing. It can serve as breakfast or dessert, add bulk to smoothies, and make delicious puddings.

It can be super flavoursome and satisfying, and I always feel like I’m working with a blank canvas and can add any variation of flavours I want – within reason of course. They can also be pretty bland though, which I’m definitely not a fan of. Flavour all the way!

One of my favourite ways to make sure is tastes damn good is to add some mashed fruit to it, as it adds some naturally delicious sweetness and packs it with even more goodness. It’s pretty cool!

I like to prepare a few of these on Sunday night so that I have them ready to go for the next few days, and they’re so quick to make that I sometimes even whip them up mid-week, with no hassle at all.

I just love being able to have these as a morning or afternoon snack, or a easy grab-n-go breakfast (you guys know I’m a huge fan of those, as shown here and here) that means I get some more time in bed or in the warm shower – anyone else struggle getting out of the shower in the winter? Such a pain…

This is the perfect quick breakfast or afternoon snack. Super tasty and super satisfying, this chia pot is just so full of goodness!

Ingredients
  • 130g mixed berries, fresh or thawed frozen*
  • 1 teaspoon fresh lime juice
  • 4 tablespoons chia seeds
  • ½ teaspoon vanilla powder
  • 250ml coconut milk
  • 1 tablespoon raw honey or maple syrup (optional)
Toppings
  • Chopped strawberries
  • Granola
  • Edible flowers
  • Fresh mint leaves
Instructions
  1. The night before or a few hours before you want to enjoy your chia pot, simply mash your berries in a bowl with the lime juice until they become a puree. Stir in your chia seeds and vanilla powder, then pour in your coconut milk and mix everything until combined. Spoon into a glass jar, seal, and place in the fridge.
  2. When you’re ready, add your favourite toppings and enjoy!

*I used a mix of blueberries, raspberries, blackberries, and strawberries!
