I’m a huuuge fan of easy breakfasts.

Something I can just easily grab and head out the door, without having to worry about making something delicious and nutritious if I’m running a bit late. That, besides the fact that it’s super yum, is why I love these lemon and blueberry bircher muesli pots!

It’s just so super creamy, and the lemon adds an amazing zing to the bircher muesli while the blueberries just burst with deliciousness!

The coconut and almond milk go so well together, you don’t get an overpowering taste of either, with just a subtle hint of warming cinnamon, so it all comes together super nicely.

I love stirring in my vanilla and cinnamon cashew yoghurt into the pot for that extra creaminess. It just feels so indulgent and delicious, and it adds some extra good fats and protein to start my day just right!

This breakfast pot is absolutely full of goodness! You get amazing fibre from the oats + psyllium husk – if you choose to add it – to keep you filling full for longer and keep your digestive system happy!

Soaking oats overnight also means they’re a lot easier for our body to digest, and are also so much easier to prepare as you just add liquid and let it do it’s thing overnight, no need to cook or keep an eye on it. So easy!

I love topping mine with pistachios, coconut, and edible flowers – they just looks so so pretty!

But you can definitely use what you’ve got add home. Almond butter would be a perfectly delicious and creamy addition, and even some toasted and crushed hazelnuts! Banana is super sweet and filling, so chop some up if you want. The options are endless!

These lemon and blueberry bircher muesli pots are the perfect breakfast to make for the week, as you can just grab a pot and run out the door knowing you have a delicious and nutritious breakfast to keep happy and going through the day!

Ingredients
For the Bircher Muesli
  • 150g rolled oats
  • 350ml milk of choice (I use half almond & half coconut)
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla powder or extract
  • 1 lemon, juiced and zested
  • ¼ teaspoon cinnamon
  • Handful blueberries
  • 2 tablespoons psyllium husk (optional)*
Toppings
  • Shredded coconut
  • Crushed pistachios
  • Cashew yoghurt
  • Edible flowers
Instructions
  1. In a large bowl combine your all of your bircher muesli ingredients - except blueberries - and mix together. Cover and set aside for 10-15 minutes so some of the liquid can be absorbed.
  2. Gently fold in your blueberries and spoon your mixture equally into 4 jars, seal, and place in the fridge to set and soak overnight.
  3. In the morning, grab a jar, top with your favourite toppings, and eat away! You don’t even need to remove from the jar, but if you want you can definitely tip the contents into a bowl!
Notes
*If you’re adding the psyllium husk make sure to add in some more liquid, as it’s quite absorbent. It’ll also make the bircher muesli thicker and more gel-like, so while it does add some amazing fibre it does also change the consistency.

GLUTEN FREE: make sure to buy certified gluten free rolled oats to guarantee it's really gluten free!
