Peanut Butter Chocolate Chunk Granola Clusters

Ingredients
  • 2½ (250g) cups rolled oats
  • ½ cup (50g) oat flour*
  • 3 tablespoons unrefined cane or coconut sugar
  • 2 tablespoons cacao powder
  • ¾ (180g) cup natural peanut butter
  • ¼ cup (65g) coconut oil, butter, or ghee
  • ¼ cup (60ml) maple syrup
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • ½ cup (50g) peanuts
  • ½ cup (60g) dark chocolate chunks
Instructions
  1. Preheat your oven to 175º C | 350ºF and line a baking tray with baking paper. Note - if your baking tray is small, you’ll need two.
  2. In a large mixing bowl, toss together the oats, oat flour, sugar, and cacao powder.
  3. In a saucepan, gently melt together the peanut butter, coconut oil, maple syrup, salt and vanilla extract.
  4. Pour into the bowl with the oats, add in the peanuts, and stir everything together until combined.
  5. Transfer onto the baking tray (or trays) and spread evenly.
  6. Bake for 40-45 minutes, tossing once halfway through. Keep a close eye towards the end so if doesn’t burn as it should be nice and browned but not burnt.
  7. Remove from the oven and let sit until cool - I like mine in clusters so I don’t disturb it until I absolutely have to.
  8. Once completely cool, toss together with the chocolate chunks. Keep in a sealed glass container or jar and it should keep for a couple of weeks, and you can also keep it in the fridge if you like.

Notes
*Simply grind ½ cup oats in a food processor or small blender. Doesn’t have to be super fine.
