Uber-Creamy Green Dream Avocado Sauce Pasta

For the Green Avocado Sauce
  • 1 avocado
  • 2 tablespoon olive oil
  • 1 tin cannelini beans, drained and rinsed
  • ¼ cup feta (omit if vegan)
  • ½ large lemon, juiced
  • 2 teaspoon Italian herbs
  • Generous pinch salt & pepper
  • Handful mixed greens (spinach, basil, rocket, etc)
  • Glug milk of choice (I used a pea milk)
To Serve
  • Cooked pasta of choice
  • Roasted tomatoes
  • Protein of choice: grilled salmon, pan-fried tofu, garlicky beans, etc
  1. Scoop your avocado flesh into a blender and add the remaining ingredients. Blend until super smooth and creamy, adding more liquid if necessary - either your milk of choice or water. Taste and adjust any seasoning, and serve!
  2. Keeps in the fridge for about 3 days sealed in an airtight container or jar.
  3. If you're adding it to pasta, gently heat up in a saucepan until bubbling and stir through pasta plus a handful extra greens. Top with some roasted tomatoes, or pine nuts, for extra oomf and add your favourite protein to keep you feeling fuller for longer.
