Chocolate Chai Mini Banana Bread

  • 3 medium ripe bananas
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg or 1 flax egg (1 tbsp ground flax + 3 tbsp water)
  • 2 tablespoons melted coconut oil
  • ½ cup low fat greek yoghurt (sub coconut yoghurt for vegan)
  • 1 cup flour (any flour of choice)
  • 1 scoop or sachet MissFits Nutrition Chocolate Protein
  • 3 tablespoons cacao powder
  • 1 teaspoon baking soda
  • 3 teaspoons chai spice
  • ¼ cup walnuts, chopped
  1. Preheat oven to 175ÂșC and lightly grease a 12-hole muffin or brownie tin.
  2. Mash bananas in a large bowl, then stir in the remaining wet ingredients together until well combined.
  3. Add dry ingredients to the bowl and mix until combined. Divide batter evenly among the 12 cups. Note - an ice cream scoop is very handy for this!
  4. Sprinkle walnut pieces on top and lightly push down.
  5. Bake for 25-28 minutes or until tester or toothpick comes out clean.
  6. Remove from tin, let cool and enjoy!
