Choc Chip Banana Bread Waffles

  • 1¼ cup flour (can use GF or plain)
  • 1 cup milk of choice (almont, coconut, etc)
  • 1 chia egg (1 tbsp chia seeds + 4 tbsp water)
  • 2 ripe bananas
  • 1 teaspoon baking soda
  • 2 teaspoons lemon juice
  • 1 teaspoon cinnamon
  • ½ cup chocolate chips (I used 100% dark)
  1. Place all the ingredients, except for the choc chips, into a blender and blend until smooth. Set aside.
  2. Heat up a waffle iron and rub with some coconut oil so that it doesn't stick.
  3. Once iron is HOT, pour in the batter and cook for about 5 minutes - should be done when no more steam is coming out.
  4. Serve with any and all desired toppings - nut butter, coconut yogurt, more banana, choc chips, and maple syrup.
If you want more sweetness, you can add 1-2 tablespoons brown sugar for extra oomf!
