Mermaid Blueberry Paleo Pancakes

Serves: 10-12 mini pancakes
  • 400ml milk of choice
  • 1 egg or 1 chia egg
  • ½ teaspoon apple cider vinegar
  • 35g vanilla protein powder (I used a pea protein)
  • 35g coconut flour
  • 35g tapioca starch or arrowroot
  • ½ teaspoon baking soda
  • 3 teaspoons blue spirulina powder
  • ½ teaspoon cinnamon
  • 1 punnet of blueberries
  • Granola
  • Blueberries and kiwis
  • Almond butter
  • Yogurt (I use an almond based one)
  1. Add all of the ingredients, except for the blueberries, into a blender and blend until combined.
  2. Heat a skillet over medium heat and lightly grease with some coconut oil.
  3. Pour about 2-3 tablespoons of the batter (I like to use an ice cream scoop) onto the heated skillet and dot with 3-4 blueberries. Note - the bigger the skillet, the more pancakes you can fit. I usually fit 3-4 in mine.
  4. Cook for 2-3 minutes, carefully flip, and cook for another 1-2 minutes. Remove onto a plate and continue until all the batter has been used.
  5. Serve with any and all desired toppings!
