6-Ingredient Granola Breakfast Vegan Cookies

- 2 bananas
- 8 tablespoons coconut butter
- 1 tablespoon chia seeds
- 25g vanilla protein powder
- ¼ teaspoon cinnamon
- 1⅓ cup granola
- Preheat the oven to 175ºC | 350ºF and line or lightly grease a baking tray.
- Peel your bananas and either place in a food processor or mash with a fork until smooth.
- Stir/blend in the coconut butter until combined, then the remaining ingredients until batter is smooth.
- Stir in granola then dollop about 1 tablespoon of the mixture onto the tray to make a cookie, repeating until all the batter is used.
- Lightly flatten the top (a wet spoon helps) and bake for 25-50 minutes or until golden brown on top.
- Let cool before removing and enjoy!
