Spicy Bacon Guacamole Dip - With A Secret Ingredient!

  • 6 bacon rashers
  • 2 medium avocados
  • 2 cloves of garlic, minced
  • 4 tablespoons cream cheese
  • 2 tablespoons coriander (cilantro), roughly chopped
  • 1 red chilli, finely chopped (and seeds removed, if needed)
  • 1 lime, juiced
  • Salt & pepper, to taste
  1. Place your bacon rashers on an oven grid rack and grill in the oven at 175ºC | 350ºF for about 5-10 minutes or until cooked through and crispy. Let cool for a few minutes before crumbling into a bowl.
  2. Cut open your avocado and spoon the flesh into the bowl. Using a fork, roughly mash the avocado so that it is still chunky.
  3. Stir in the remaining ingredients and mix everything together. Taste and adjust lime juice, salt and pepper, if needed.
  4. Serve with some chopped veggies, in a salad bowl, or with some healthy tortillas
