4-Ingredient White Chocolate Almond Butter Cups

Ingredients
  • ¾ cup (180g) cacao butter
  • 2 tablespoons coconut butter
  • 1-2 tablespoons icing sugar replacement (such as powdered stevia or erythritol)
  • 3-4 tablespoons crunchy almond butterâ €
Instructions
  1. Place the cacao butter and coconut butter in a pan and melt together over low heat, then whisk in the sweetener.
  2. Arrange 9 muffin cases in a tray and spoon 1 tablespoon of the mixture into each and place in the freezer to set for 15 minutes.
  3. Remove and spoon about 1 teaspoon of almond butter into each and lightly press to flatten.
  4. Evenly divide the remainging white chocolate mixture into the cups, it should just cover the almond butter.
  5. Place back in the fridge or freezer to set, about 30 minutes to 1 hour and enjoy!
  6. Keep in an airtight container in the fridge to enjoy throughout the week
Notes
If you want to use peanut butter that is absolutely fine, or for a nut-free version you could mix some tahini and cacao powder, or use a pumpkin seed butter.
