The Ultimate Low Carb Chocolate Chip Cookies

- ½ cup (110g) butter, softened
- ⅓ cup (75g) sukrin gold*
- ⅓ cup (75g) granulated natural sweetener such as stevia
- 2 eggs
- 2 cups (200g) almond flour
- 1 teaspoon vanilla powder or extract
- ½ teaspoon baking soda
- Pinch of salt
- ⅔ cup (115g) chocolate chips
- Cream the butter and sugars together until light and fluffy.
- Beat in the eggs until combined, then beat in the almond flour, baking soda, and salt.
- Fold in chocolate chips, then use a ice cream scoop or spoon to create about 12 cookies, placing the mounds on a lined baking tray.
- Place in the freezer for 20 minutes while you preheat the oven to 175ºC | 350ºF.
- Once oven is hot, bake cookies for 8-10 minutes, until browned in the corners but still soft in the centre.
- Let cool to set before enjoying!
*Sukrin Gold is a brown sugar replacement made from erythritol, malt and stevia
