Add all the ingredients for the oatmeal into a pan and heat on low-medium heat, stirring occasionally, until the oats have softened to your liking - about 10 minutes - adding more coconut milk or water if necessary.
Serve the coconut porridge topped with more maple syrup and any extra desired toppings.
Notes
I sometimes like to add whipped egg whites to my oatmeal to increase the protein content. If you do eat eggs, simply use 4 egg whites and whisk into the oatmeal about 5 minutes in. Continue whisking until fully incorporated, then whisk frequently until done to your liking.
