Blackberry & Baked Honey Goat's Cheese Warm Salad Bowl

  • 80g soft goat's cheese log
  • 1 teaspoon honey
  • 1 teaspoon olive oil
  • ¼ cup blackberries
  • 2 tablespoons hazelnuts
  • 1 egg
  • 1 large handful greens
  • Drizzle of balsamic
  • Squeeze of lemon
  1. Preheat your oven to 175ºC/350ºF and line a small baking tray with some baking paper.
  2. Cut your goat's cheese into 3 equal disks and place on the baking tray, drizzling over the honey and olive oil.
  3. In a corner in same tray add your blackberries, and in a different side the hazelnuts.
  4. Bake for 8 minutes, toss the hazelnuts, and place under the broiler for a further 2-3 minutes.
  5. While the cheese, nuts and blackberries broil, add some boiling water and vinegar to a pan and poach your egg for 3 minutes for a runny yolk.
  6. Toss your green leaves in some balsamic and lemon juice and serve with the poached egg, baked goat's cheese, warmed blackberries and toasted hazelnuts.
