4 dates, pitted (if using dried, soak for an hour and drain before using)
1 tablespoon desiccated coconut
1 tablespoon coconut oil
1 tablespoons maple syrup

2 cups (500ml) full fat greek or plant based yogurt, strained if too watery
1 teaspoon vanilla powder or extract
½ cup mixed berries
Pinch of sea salt

Granola (I used my Maple and Coconut Homemade Granola)

Instructions
Start by making your base. Add the oats and cashews into a food and pulse until it breaks down into a flour-like texture. Add in the remaining ingredients and pulse until sticky.
Divide evenly into your jars and press down.
Make the middle layer by stirring all the ingredients together. Divide evenly over the base layer in the jars.
Top with granola and fresh berries. Serve cold.
